Gluten-Free Recipes for the Winter

Eating gluten-free (whether out of necessity or for diet) tends to bring people to eat more vegetables. And the best foods are the ones that are in season, so what better than finding seasonal recipes to cook with? Here are three tasty, gluten-free recipes perfect for wintertime.

Gluten-Free Acorn Squash Soup

1 acorn squash

1 cup vegetable broth

2 carrots, chopped

1 yellow onion, diced

1 clove garlic, minced

1 tsp ginger

1 tsp cinnamon

1 tsp nutmeg

Olive oil

Preheat the oven to 400 degrees. Cut the acorn squash in half and scoop out the seeds. Lay each half in a baking dish and bake in the oven for about 45 minutes, until the flesh is soft. Once cool, scoop out the flesh of the squash and set aside.

Heat the olive oil in a pan over medium heat, and sauté the carrots, onion, and garlic until soft. Then, add the vegetable broth, ginger, cinnamon and nutmeg. Mix well over medium heat, then add in the acorn squash. If the soup is too thick, add water until it has reached the desired consistency. If you prefer to have a soup without chunks, you may pour this mixture into a blender and puree until smooth.

Gluten-Free Mac and Cheese

1 box gluten-free pasta

3 tbsp rice flour

2 cups whole milk

2 cups gluten-free cheese, shredded

½ tsp Ground mustard

¼ tsp nutmeg

First, cook the pasta following package directions. Drain the pasta and set aside. Pour the milk into a small saucepan and then bring to a low simmer. Slowly stir in the rice flour, a bit at a time. Keep the heat on low, and continue to stir. The sauce should begin to thicken. Slowly add the cheese and stir until melted. Add the ground mustard, nutmeg, and a pinch of salt and pepper to the cheese sauce. Then mix in the pasta until fully combined.

Gluten-Free Apple Crisp

8 apples

1 stick butter, melted

4 cups gluten-free old-fashioned oats

½ cup almond flour

½ cup brown sugar

1 tsp cinnamon

Preheat the oven to 375 degrees. Peel, core, and dice the apples, and then place them in a greased 9×9 baking dish. Mix together the rest of the ingredients in a large bowl. Then, spread and cover the apples with the topping. Bake for 30 minutes, until the topping turns golden brown. Top with vanilla frozen yogurt for an extra special treat!
